Cyanide Contents Of Raw And Processed Cassava Products In Ikwuano Local Government Area, Abia State
ABSTRACT
The cyanide content of raw and processed cassava products in Ikwuano Local Government Area, Abia State of Nigeria was determined using the Alkaline picrate method. Result showed mean total cyanide content in the range of 0.00 and 0.10 mg/kg respectively. The cyanide content of the cassava samples assayed gave the following values (0.10, 0.04, 0.02, 0.01, 0.01, and 0.000) for cassava tuber, high quality cassava flour, odourless fufu flour, garri, fufu, and tapioka respectively. Maximum cyanogens content was dictated in raw cassava sample (0.10) and minimum cyanogens content tapioca (0.00). The raw and processed samples differed significantly (P<0.05).The result also revealed that 100% of the processed samples in Ikwuano L.G.A., Abia State had mean total cyanide content below the 10mg /kg recommendation by W.H.O. for 4 cassava products; this implies that food processing has a marked effect on the cyanide content of different food types indicating that processing make them suitable and safer for consumption. >
