ABSTRACT
The aim of this project is to
compare the bacterial activity of bacteriocins produced from Lactobacillus
species and Lactococcus species against some very common test reference
pathogens. Lactobacillus species and Lactococcus species were isolated from kunun-zaki
using MRS medium at 35°C for 48hours. The isolates were characterized by
phenotypic features, biochemical activities and growth at different pH and
temperatures. Their bacteriocins were then produced and screened for their
antibacterial activity against test reference pathogens such as Staphylococcus
aureus (ATCC25923). Enterococcus faecalis (ATCC7O9O), and Escherichia coli
(ATCC25922) using Agar-well diffusion assay. Thirty-one isolates were obtained
from 15 kunun-zaki samples but only six showed promising antibacterial
tendencies with zone sizes of 8mm against S. aureus and 9 and 11mm against E.
coil. Lactococcus species were found to be more effective against any group of
bacteria. These strains were able to produce bacteriocin and inhibit the growth
of the test reference pathogens.
