ABSTRACT
Though
undervalued, spices form an integral part of our diet because they determine
the taste, colour and preserving quality of foods. Their flavour, taste,' and
colour enhances the organoleptic properties of food. However, not much research
studies have been made about their nutritional composition. This study
evaluated the proximate, vitamins, minerals and anti-nutrient compositions of
Afrostyrax lepidophylus spice. The spice was obtained from a market in Abia
State, Nigeria. Seeds of Afrostyrax lepidophylus spice was grounded into
powder. This ground powder was evaluated for proximate, vitamins and
anti-nutrient compositions using standard methods. The data obtained from the
evaluation was analysed for mean and standard deviation. The results from the
analysis showed that Afrostyrax lepidophylus spice contained 10168% moisture,
7.95% protein, 4.76% fat, 2.42% Ash, 63.37% carbohydrate and 383.23 kcal
Energy. Afrostyrax lepidophylhis seeds powder contained 50.15mg/100g calcium.
2.77mg/100g of iron. The vitamin content of the spice was 5.87UI of beta-carotene,
2.16mg/100g of Vitamin Bl, 6.78mg/100g of Vitamin B2. 0.83mg/100g of vitamin
B3, 6.47mg/100g of vitamin C and 36.26mg/100g ofVitamin E. The anti-nutrient
ofAfrostyrax lepidophylus spice were 0.94% of oxalate, 0.45% ofPhytate, 3.44%
oftannins, 0.94% ofsaponins and 3.74% of alkaloids. Afrostyrax lepidophylus
spice is a rich source of macro and micro nutrients with low anti-nutrients
content.
