ABSTRACT
The bacteriological quality of
various foods sold in the food canteens of Michael Okpara University of
Agriculture, Umudike, was assessed. Samples of fifteen different food types
were obtained from randomly selected five canteens and they include;
Merchandise canteen, Chinams canteen, Big Radio canteen, Impeceable canteen and
Mama Chijioke canteen. The total viable and coliform counts of the various
foods from different canteens were determined. The total viable counts ranged
from 3.9 x iO4CFU/g to 9.0 x iO4CFU/g, with the highest incidence seen in
Moi-Moi sold in Big Radio canteen. The total coliform counts ranged from 1.0 x
I to 5.3 x 102 CFU/g, with the highest incidence seen in Jollof rich sold in
Impeccable canteen. Pathogens such as Staphylococcus aureus, Salmonella
species, Shigella spp, Kiebsiella spp, Bacillus spp were isolated from the food
items and identified using their morphological and biochemical Characteristics
and their pattern of growth in food samples. These result indicated that the
microbial quality of foods sold in the canteens is below acceptable standard
and immediate action to ensure acceptable level of microbial quality of the
foods is required.
