ABSTRACT
Traditionally fermented food ogi and Tomato
products used in this study were purchased around Michael Okpara University
ofAgriculture, Umudike, Abia State. 25g of each sample was mixed with 225ml
ofpeptone water to obtain tenfold serial dilution. Pour plate technique was
employed and was cultured on MRS and incubated for 24hours at 37°C. The
isolated Lactobacillus species identified were Lactobacillus plantarum,
Lactococcus lactis and Lactobacillus cereus. The antimicrobial activities of
the isolated LAB against some food spoilage organisms (Bacillus cereus,
Pseudomonas and E.coli). Cell free supernatant of the LAB was able to inhibit
the growth of spoilage microorganism. The largest zone of inhibition wasl 5.0mm
produced by Lactobacillus brevis against Bacillus cereus while the least zone
of inhibition was produced by Lactobacillus lactics against Pseudomonas 11.0mm.
The diameter zone of inhibition produced by Lactobacillus plantarum against
Fusarium showed an inhibition of 16.0mm. Probiotics could be another
inexpensive substitute to the antibiotics that many microorganisms are now
becoming resistant to because it is biosafe and easy in application
