ABSTRACT
The aim of the study is to develop
nutritious and accepted fortified snacks based cowpea (Vigna unguiculate walp),
soybean (Glycine Max)and African yam bean (Sphenostylis Stenocarpa).The grains
were purchased from local retailers in Umuahia main market. After cleaning the
grains, the grains were soaked, dehulled, sun dried and milled into flour and
sifted with sieve. Each of the legume flour were mixed with wheat flour in the
proportion of 90% legume, 10% wheat, 80% legume, 20% wheat, 70:30, 60:40 and
50:50 respectively. The product were compared chemically with already prepared
one bought from primary school which was used as control. Organoleptic
evaluation of the products was conducted. Analysis of variance and standard
deviation were used to compare mean scores for the different attributes and
also Duncan new multiple test were use to separate the means. The chemical
analysis showed that the fortified samples were nutritively higher in content
than the control. Among the products the ratio 90:10 seemed to be the best in
protein composition. The nutrient composition was found adequate.
