ABSTRACT
This
study investigated the proximate composition, vitamin content, and sensory
attributes of a mixed fruit Zobo drink produced from Zobo flower (Hibiscus
sabdariffa), pineapple, and cucumber. The research aimed to develop a
functional beverage that combines nutritional value with consumer appeal. The
increasing consumer demand for nutritious and refreshing beverages has driven
interest in formulating fruit-based drinks with enhanced health benefits. Three
formulations were prepared using varying ratios of Zobo, pineapple, and
cucumber, and analyzed for proximate components (moisture, protein, fat, fiber,
ash, and carbohydrate), vitamin composition (Vitamin C, Vitamin E, Vitamin B6,
Provitamin A, and Vitamin K), and sensory properties (flavor, color, texture,
and overall acceptability). The samples were statistically analyzed using
one-way Analysis of Variance (ANOVA), and mean separation was determined using
Duncan’s Multiple Range Test (DMRT) at a significance level of P < 0.05. Results
revealed that the Zobo-based formulation enriched with pineapple and cucumber
significantly improved the drink's nutritional profile. The formulation with
60% Zobo, 30% pineapple, and 10% cucumber (ZP-A) demonstrated optimal
nutritional balance, with higher protein (0.49%) and moisture content (91.57%),
reduced fat levels (0.05%), and enhanced Vitamin C (17.82 mg/100g) and
Provitamin A (26.17 µg/100g) concentrations. Sensory evaluation identified ZP-A
as the most preferred formulation due to its refreshing flavor, vibrant color,
and balanced mouthfeel. In conclusion incorporating pineapple and cucumber into
Zobo drink enhances its nutritional quality, aligns with health-conscious
consumer preferences, and ensures high sensory appeal.
