ABSTRACT
This study aimed at evaluating the proximate
composition and anti-nutrient in bread produced from wheat and orange fleshed
sweet potato composite flour. Bread was produced using wheat and orange fleshed
sweet potato flour blends in the ratios: 100:0, 90:10, and 80:20 and were
labeled BWF, BWS1, and BWS2 respectively. Sample BWF served as the control. The
proximate and anti-nutrient of the bread were evaluated using standard method
and data generated were subjected to one way analysis of variance using IBM
statistical product for service solutions (version 23.0). The results of the
analysis showed significant differences (p<0.05) in the samples. The result
of the analysis of the proximate composition of the bread showed that sample
BWS2 recorded the highest moisture ( 27.17%), fat (3.50%), ash (2.13%) and
crude fiber (1.76%) with lower values of protein (9.63%), carbohydrate (55.83%)
and energy value (293.28kcal) while sample BWF recorded the least moisture
(26.75%), fat (3.14%), ash (2.07%) and crude fiber (1.32%) with higher values
of protein (10.19%), carbohydrate (56.53%) and energy value (295.14%). The
anti-nutrient contents decreased as the orange fleshed sweet potato increased;
sample BWS2 recorded the least values for tannin (0.32mg/100g), for phytate
(1.03mg/100g) and for oxalate (1.86mg/100g) while sample BWF recorded the
highest values (1.46m/100g) for tannin, (2.98mg/100g) for phytate and
(4.52mg/100g) for oxalate. This study concludes that production of bread from
wheat and orange flesh sweet potato composite flour enhanced the nutrient
content of the bread and hence should be encouraged as consumption of the bread
will be suitable to fight vitamin A and other micronutrients malnutrition.
