ABSTRACT

Food environments are the conditions that influence people's food and beverage choices as well as nutritional status and are regarded as the consumer interface with the food system that encompasses the availability, affordability, convenience, promotion and quality, and accessibility of foods. This study examines the perceptions of the food environment and its influence on the dietary behaviors of university students at Michael Okpara University of Agriculture, Umudike, employing the photovoice methodology. Utilizing a participatory action research framework, 20 undergraduate students documented their food environments through photographs and participated in in-depth interviews to elucidate their experiences. Key dimensions of the food environment—availability, accessibility, affordability, convenience, advertisement, and quality were analyzed using thematic analysis to identify their impact on dietary choices. The findings reveal significant reliance on local markets, seasonal and economic influences on food availability, and the constraints imposed by storage limitations. Additionally, the study highlights the pervasive role of affordability and convenience in shaping food preferences, often leading students toward processed and less nutritious options. Marketing and promotion were also found to exert notable influence on packaged food purchase among the students. This research underscores the importance of addressing structural and economic barriers to healthier eating through targeted interventions and policies. Moreover, it demonstrates the efficacy of photovoice in capturing and contextualizing the complex interplay between food environments and individual dietary behaviors, providing a valuable methodological approach for future studies in nutrition and public health.
