ABSTRACT
Proximate, Minerals and Vitamin C composition of fortified
and supplemented pigeon pea pudding was compared to the unfortified pudding.
The results showed that the pigeon pea pudding supplemented with millet and
crayfish contained more nutrients than the pigeon pea pudding alone. The result
showed that the supplemented pigeon pea pudding of sample 1938, contained ' moisture
71.67, fat 7.59, fibre 1.67, Ash 1.67, carbohydrates 13.87 and protein 3.54.
Sample 1523, sample 1798 and sample 1844, had higher nutrient levels. The
unfortified pigeon pea pudding, which served as the control, contained moisture
69.84, fat 5.22, fibre 1.57, Ash 1.25, carbohydrates 18.77 and protein 3.35. In
terms of mineral and vitamin composition, there was no significant difference
among the samples. The pigeon pea pudding alone (the control) was more
generally accepted by the consumers than the other samples.
