ABSTRACT
This study was aimed at isolating, identifying and
characterizing the bacteria and fungi associated with the spoilage of citrus
fruits (orange, lime and lemon) and also evaluating the enzymatic potentials of
these microorganisms. Twenty one (21) samples were analyzed and the bacteria
isolated belonged majorly to the genera Staphylococcus, Pseudomonas, Proteus,
Klebsiella and Listeria while the fungi isolated were Yeast, Aspergillus spp.,
Penicillium spp., Rhizopus spp., Mucor spp. and Fusarium spp. from the study,
Staphylococcus spp. was the most prevalent bacteria isolate with 57.14% while
Saccharomyces cerevisae was the most prevalent fungi isolate with 71.43%. The
enzyme activities of the isolates were also evaluated. The isolates were
screened for protease, amylase and lipase activities. Klebsiella spp. produced
the highest protease and amylase activities with halo zone diameters of 9.0 mm
and 11.0 mm respectively while Staphylococcus spp. and Pseudomonas spp. both
had the highest lipase activity with 6.67 mm diameter halo zone each. Penicillium
spp. had the highest protease and amylase activity with halo zone diameters of
14.83 mm and 14.20 mm respectively while Rhizopus spp. on the other hand also
produced the highest lipase activity with halo zone diameter value of 10.0 mm.
