ABSTRACT

 A food safety management system (FSMS) is a comprehensive approach implemented by food-related industries to ensure the safety and quality oftheir products throughout the entire production process. It involves the systematic identification, assessment, and control of potential hazards that could compromise the safety of food products. Key elements of an FSMS include good manufacturing practices, hazard analysis and critical control points (HACCP). regular monitoring and testing, proper documentation, and continuous improvement. By adhering to an FSMS, organizations aim to meet regulatory requirements, build consumer trust, and ultimately deliver safe and high-quality food to the market. In essence, a food safety management system is like a meticulously crafted recipe for ensuring that the food we consume is not just delicious but also free from any harmful contaminants. It's a proactive approach where every step of the production process is carefully examined and controlled to prevent potential hazards, ranging from biological and chemical threats to physical contaminants. Imagine it as a well-choreographed dance where everyone from the raw ingredient suppliers to the production line workers plays a crucial role. The star ofthe show is often the Hazard Analysis and Critical Control Points (HACCP) system, which identifies specific points in the process where potential risks can be minimized, controlled, or eliminated.
