ABSTRACT
The life animals (Fish) caught in the sea or fresh water
need to be handeld or processed with additives or chemical preservative and
freeze before distribution (FAQ i99Ll). According to Ohlsson, (1994), fish
processing involve procedures that changed little inherent fresh quality
attributes of fish products bLit at We same time endow the fish product with a
shelf life sUfficIent for its transportation from the processing area to We
consumers. He sl:ateci that, traditionally, processed fish are ottrachve to
both the consumers and the processors because they maintain the best
opportunity for retaining fresh quality without incurring excessive cost of
processing. Fish processing as defined by M.O. Ella, (i83) is the deliberate
attempt by fish processor to present the final product in the best possible way
in order to attract consumers. He emphasis that fish processing is a way that
the high quality of the fish is maintain for human consumption over a long
period of time.
