ABSTRACT
The design
and fabrication process of a multi-crop slicing machine, detailed within this
project, align with one ofthe critical steps involved in root and tuber crop
processing (slicing). The project details the engineering steps in the
development of the slicing machine, which ensures consistent slicing, leading
to uniform drying and microbial growth control. The performance evaluation
results demonstrate the slicing machine's remarkable capabilities. For the
materials tested, the machine achieved remarkable throughput, with figures of
136.36 g/s for potatoes, 150 g/s for onions. 115.38 g/s for ginger, and 125 g/s
for cassava. Also, the machine consistently maintained high slicing efficiency,
with efficiency percentages of 95.13%, 97.53%, 96.67%, and 96.33% for potatoes,
onions, ginger, and cassava, respectively. Based on this result, a python
script was written for producing the machine in various capacities. The
recommendations provided are aimed at enhancing its capabilities, from user
interface improvements to material compatibility expansion. This project offers
a comprehensive view ofthe slicing machine's development, performance, and
potential for various industries.
